Clean Chilli and Baked Potato


When it comes to baked potatoes, I'm not the most adventurous person. Usually I stick to baked beans or have a salad with it. But I found this chilli recipe and I thought I would give it a go - it was amazing! 


 Ingredients (for one):

  • a handful of lean minced beef (I'm not actually a fan of red meat a lot so a little drop done me fine)
  • Half an onion diced
  • 1 tsp of chilli powder
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1 tsp of oregano
  • Salt and pepper to taste
  • 100g of kidney beans (drained)
  • 1 small cup of beef stock/water
  • 2 tbsp of tomato puree
  • 1 tbsp of olive oil
  1. Put a pot on a medium heat and add olive oil and onions until brown
  2. Add chilli powder, paprika, cumin, oregano, salt and pepper and stir through
  3. Add mince until brown
  4. Add the kidney beans and beef stock/water
  5. Turn the heat down low and let it simmer until some of the water/stock has evaporated (about 30mins)
  6. Add to tbsp of tomato puree to make it a bit thick
  7. Its now ready! Add to anything you like - baked potatoes, rice, etc
